WEEK - ALL INCLUSIVE Traditional
Italian Charcuterie: Curing Meats, Sausage
Making & Artisanal Salumi Famous internationally,
most of the world hasn't seen or tasted most
of the cured delicacies available throughout
Italy. Traditional Italian Charcuterie literally
brings participants first to the farm demonstrating
how to identify and select livestock and then
to the laboratory for hands-on production
of over twenty-five types of sausages, salumi
and meats that can also be personalized. This
program uses only natural ingredients for
long term conservation and does not employ

Italian Cheese Making
Artisan Cheese Making is the
most complete one week cheesemaking program
in Italy. The hands-on course begins with
the science necessary to process any type
of cheese and quickly moves into the production
phase. In addition to producing classic regional
Italian cheeses, a special section of the
course shows participants how to develop personal
cheeses to fit any taste and preference. As

WEEK - ALL INCLUSIVE Pizza, Focaccia & Specialty Breads
During this fully hands on course, we first prepare traditional baked products and then a line of innovative delicacies are made course how participants can personalize their recipes for their clients or guests. A series of specialty breads are prepared using both natural yeast techniques. Participants use Italy's unique flour combinations combined with seasonal ingredients while creating breads, pizza, focaccia and over 20 breads with an array of textures, flavors and colors. During this course the masters concentrate on techniques to make delicacies for restaurants, catering and display cases. This program is designed for both experienced pastry chefs, gelato makers and aspiring shop owners. The course covers over 20 traditional and innovative Italian desserts and pastry as well as every aspect of real artisan gelato production including personal recipe development, blueprinting for a single gelato shop or multiunit operation, equipment specifications, and a profound examination of the chemistry and physics needed to render a perfect product, pricing, etc. Includes cultural travel. Regional Cuisine: Curing, Pickling & Sun-drying
Since ancient times, people have been conserving
seasonal foods for later use. ICI's perfect location in
the heart of the Mediterranean assures that the best array
of produce, fruit and verdure are in season year round.
The Foundation of Italian Regional Cuisine: Curing, Pickling
& Sun-drying goes beyond the standard and enables culinarians
to develop and conserve component ingredients that can be
incorporated to any chef's or pastry chef's repertoire with
personal products that can be stored on a shelf freeing
precious refrigerator and freezer space. All products are
long term cured utilizing antique and state of the art methods
and no conservatives, preservatives or gelatins are used
